Batty for Blackberry Pie! (And Pie Crust Cookie Bats)

I'm kind of a batty lady...

MUAHAHAHAHAHAHA!

Ok no I'm not really....just tired...and a little delirious...so this post might be a little strange...

But hey, you'll get a yummy recipe from it so....there's that.


Oooooo..looks creepy and Gothic...like it could be filled with baked black beetles.  Blackberry Beetles...

Baked Blackberry Beetles.....say that 6 times fast...

Ok, it isn't that hard ...never mind.

Anyway!!  It'a a blackberry pie!  A mini blackberry pie!  Make that 2 in this picture....make that 3 to 4 from this recipe that I'm just about to give you...



Batty Blackberry Pie

2 batches of Best Pie Crust Ever
4 pints of fresh blackberries
1/2 c granulated sugar
4 TBSP corn starch
3 TBSP melted butter
juice of half a lemon
2 TBSP flour
1/4 C apple juice
1 tsp cinnamon

Preheat your oven to 400.

Make your crust according to the directions.... then chill for an hour in your fridge.

While that is chilling mix your berries all the way through your cinnamon in a large bowl.  Mix lightly so as not to break up your berries.

When your dough is chilled, roll out 2 sections of dough.

**ok y'all....please excuse the photo quality here....was in the kitchen and I'm using iPad pics for this....but even then on that note...isn't it amazing how far technology has come in 10 years??  Imagine me trying to show you this with pics I took from my phone 10 years ago....so yeah)**


Place your pie plate on it upside down


Trace around the pie plate with a knife leaving about 1/2 and inch around


Find your favorite bat cuttter (2-3 inches; no bigger) and cut your bat out of the middle of your circle.  Save the bat....place in the freezer to quick chill while you roll out the other 2 sections and pit them into the pie plates.


Fill your crusts....this will make 3 or 4 depending on how much filling you put in each pie.  Then place your bat cut out rounds on top.  They will be easily moved now that they are chilled.

Get it centered....


Then crimp your edges together for a good seal.  Add your little bats....because it's cute.

Brush your crusts with a little cream and sprinkle with coarse sanding sugar.

Place your pies on a baking sheet, and put them in the oven.  Cook at 400 for 15 minutes, then 350 for 35 more.


Oh....and your going to notice you have all kinds of scrap dough left over....

So make pie crust cookies...


Just cut out more bats....brush with cream then bake them....400 for about 5-8 minutes....till brown....

Take some blackberry jam in a cup or small bowl.  Mix it up till it's a little more liquid in consistency.  Using your pastry brush, brush the jam in a very thin layer on your bats.  Then sprinkle with black sanding sugar.

Holy sweet sugary Halloween goodness Batman!!!  And no need to waste good pie crust.

Heading back to the bat cave now...to take care of my bats....and one baby dragon...I'll tell you about that later...

Just what I needed to warm my house today! Sweet Summer Blackberries in the freezer wanting to get out! Will be my first pie crust cookies though! Thanks for sharing this with us!
