WFD? Guinness Chocolate Cake with Baily Scented Cream

EAT ME!  I'M IRISH!  That was going to be my alternative title...but I figured... yeah maybe not. 

St. Patty's Day is this weekend, which means we're going all Irish this week.

Remember St. Patty's last year?


yes, that's my hubs with his St. Patty's Day version of "green beer".  Green Chardonnay.  Just to class it up.

or was that the year before??

Anywho, I was just thinking about that St. Patty's Day and how my husband was the only one getting festive.  Trying to cheer me up after a bad day by being his usual silly self. 

So I thought maybe this year I should do something for him for St. Patty's Day.  Cheer him up after a long day at work.





To show him how much i love him, and totally get him on the most meaningful level...

The Beer Level



I really like this cake.  It's springy and moist and rich.  It has a deep chocolate flavor, but at the same time, it really isn't what I would consider to be very sweet.

Hence the Baily Scented Whipped Cream.


Guinness Chocolate Cake

Baking Pam (for pan)
9 oz unbleached flour
2 c. sugar
3/4 c. good quality cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 c. heavy cream
4 oz. bittersweet chocolate
1/2 c. vegetable oil
2 large eggs
1 tsp vanilla extract
1 12oz bottle Extra Stout Guinness beer

Preheat Oven to 350. 

Place all dry ingredients in your mixing bowl.  mix on low till all blended and "sifted".  This is my cheat way of sifting dry ingredients.  In a separate bowl, place cream and chocolate.  Heat in microwave for about a minute.  Stir.  Continue heating at 30 second intervals until chocolate has melted.  To the cream, add the remaining wet ingredients.  Whisk together to combine.  Add the wet ingredients to the dry ingredients in the bowl with the mixer on low.  Bring up the speed to medium and beat for about a minute.  Pour batter into a large (12 c.?) bunt pan, or 2 9" cake pans covered with a light spray of Baking Pam.  Bake for 30 minutes, or until a knife inserted in the center comes out clean.

Let cool in pan on a wire rack.



Baily Scented Cream

1 pint heavy whipping cream
2 TBSP sugar
1 TBSP Baily Irish Cream Liquor

Place all ingredients in your mixing bowl with your whisk attachment armed.  Whip at med-high speed till peaks form.  Make sure not to over beat.  It helps if the bowl and the beater is cold.




It's good!  I think even my husband, who isn't into sweets, will really like this one.  If your a fan of Guinness or any stout beer, then you are going to want to give this one a shot. :)

**UPDATE**
Gave some to my hubs last night.  He isn't a huge sweets person, so he looked skeptical.  Like I was forcing him to eat something questionable.  He took one bite, and dashed, with the rest of it, back to his seat.  He LOVED IT!  So if your man is like mine, and he doesn't share your addiction love of sweet things but he does have a healthy obsession love of beer, you must make this!

Hello, I'm a friend of your mom's. She and I visited a local quilt show the other week and she introduced me to your great work. I've shared with my friends, too. I'm loving it! Anyway, I am also a FB follower and noticed something yesterday. I'm also a follower of Granny B's quilt shop in Dickson, TN. Her logo and yours are so similar. Yours is more sophisticated, but the color, shape and theme are a lot alike. Don't know how may of your fans may overlap with hers, but just wanted to show you. Makes me do a double take when they come up! Keep up the great work! I love it!

Your husband is adorable! This cake looks delicious. My husband is not a big sweet eater either but if yours loved this cake that's a good enough endorsement for me to get baking it.

This cake looks relish. Do you have a version of this recipe with a non-alcoholic substitute for the beer? Thanks!

Kathy, well you can always use non-alcoholic beer like odouls. beer has a fairly low alcohol content when compared to liquor, so generally speaking most, if not all of the alcohol from the beer should bake away leaving the flavor but not the alcohol.
